Ingredients
4 to 5 lb well-trimmed fresh boneless beef brisket (not corned)
1 teaspoon salt
1/2 cup ketchup
1/4 cup white vinegar
1 tablespoon Worcestershire sauce
1 1/2 teaspoons liquid smoke
1/4 teaspoon pepper
1 medium onion, finely chopped (1/2 cup)
1 dried bay leaf
Preparation
Heat oven to 325°F.
Rub surface of beef with salt. Place in ungreased rectangular pan, 18 × 9 inches. Mix remaining ingredients and pour over beef.
Cover and bake about 3 hours or until beef is tender.
Cut thin diagonal slices across grain at an angle from 2 or 3 “faces” of beef. Spoon any remaining pan juices over sliced beef, if desired. Remove bay leaf.
