1 tablespoon extra-virgin olive oil
1 garlic clove, sliced
1 x 14.5oz can chopped tomatoes
6 fresh basil leaves, chopped
salt and freshly ground black pepper
4 thin slices of lean ham
Preheat the oven to 350°F.
Heat the oil in a medium frying pan and gently fry the garlic until
golden. Add in the chopped tomatoes and cook over medium heat for
10 minutes, stirring occasionally.
Once the sauce is ready, stir in the basil and season with salt and pepper.
Place the ham on the bottom of two individual baking dishes (about 4in
in diameter and 21/2in deep). Pour in the cooked tomato sauce and crack
an egg over each dish. Bake in the middle of the oven for 13 minutes, or
until the eggs have just set.
