Mini Strawberry Shortcakes

Mini Strawberry Shortcake Cupcakes

Ingredients:

  • 1 1/2 cups self rising flour
  • 1 1/4 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 3 pints of fresh strawberries
  • 2 cups heavy cream
  • 2 tablespoons confectioner's sugar

Directions:

1. Preheat oven to 350 degrees.
2. Combine flours in a small bowl.
3. Using a mixer, cream the butter until smooth and add the sugar gradually until a mixture becomes fluffy.
4. Add eggs one at a time, beating well.
5. Add the dry ingredients in 3 parts, alternating with the milk and vanilla.
6. With each addition, beat only until ingredients are incorporated.
7. Fill pans about 3/4 full and bake 12-15 minutes.
8. Make whipped cream by beating the heavy cream with the sugar until peaks
begin to form. Refrigerate until you are ready to assembly.

Assembly:

When cupcakes are at room temperature, cut across the cupcake so you have a top and a bottom.

Put 2 tablespoons freshly whipped cream on bottom half of cupcake, topped with a generous layer of sliced strawberries and another dollop of whipped cream. Put the top part of cupcake on and garnish with whipped cream, more fresh berries, and mint.

Makes approximately 50 miniature cupcakes.
