Halibut is a large, flat ocean fish that is versatile the way you can prepare it. The flesh is meaty and can substitute for steak if you’re trying to cut back on saturated fat. You can grill halibut, bake it, pan-fry it or bread it for fish and chips. Cooking halibut in butter is a common way to add flavor and richness to the meat. Use butter to cook halibut occasionally, since it is a source of saturated fat.
Set a sauté pan or skillet on the stove over medium heat and spoon 2 tablespoons of butter in the pan.
Add 1 tablespoon of olive oil and tip the pan around to combine the two. Adding oil prevents the butter from burning.
Wait until the butter starts to foam a little, and hen add your halibut steaks or fillets. Cook the fish for about 2 to 3 minutes per side, until it’s cooked through and flaky.

Preheat your grill to medium and set your halibut steaks or fillets on a standard baking sheet.
Mix 3 or 4 tablespoons of butter with fresh chopped herbs, minced onion or garlic in a bowl, until combined.
Set a saucepan on the grill and add the flavored butter to melt it. Remove the pot from the grill. Set the baking sheet with the halibut on the grill and close the lid.
Spoon the melted butter over the halibut as it cooks on the grill. Let it cook for about 3 minutes per side, until it is cooked through and flaky.
