A Protein-Packed Avocado Toast For Everyday
Earlier this week we shared the perfect Detox Green Smoothie to kickstart our 2016 healthy eating plan and today we've got a delicious Protein-Packed Avocado Toast that you can enjoy for breakfast, lunch, dinner, or even as a post workout snack! The best part about avocado toasts are their versatility and how quickly they come together. For this recipe we layered lemony mashed avocado, crumbly feta cheese, a hard-boiled egg, and zesty scallion slices over a whole-grain english muffin -- it's sure to be your new favorite!
What You'll Need:
- 1 whole-grain english muffin, toasted (or your choice of bread)
- 1 large egg, hard-boiled
- 1/2 avocado, mashed
- 2 teaspoons lemon juice
- 1 tablespoon feta cheese, crumbled
- 1 tablespoon scallions, thinly sliced
- flaky sea salt and freshly cracked black pepper
Step 1: Bring a pot of water to a boil and add your egg. Cook it for about 7 minutes (or longer, if you like). Meanwhile toast both halves of the english muffin (or your choice of whole-grain bread). Evenly spread and mash the avocado onto both pieces of toast. Drizzle the lemon juice over the top.
Step 2: Sprinkle the feta over the mashed avocados. Peel and slice the hard-boiled egg and layer the slices over the feta. Season generously with flaky sea salt and freshly cracked black pepper. Sprinkle the scallion slices over the top and enjoy!
