A Healthy Holiday Side Dish Made Easy
Between the sweet potato casserole, pumpkin pie and homemade stuffing, it's a little too easy to overindulge during the holidays. Balance things out with this good-for-you green beans recipe -- it's healthy, quick and comes together in just under 30 minutes.
What You'll Need:
- 2 tablespoon butter
- 1 tablespoon olive oil
- 3 large shallots
- 5 garlic cloves
- 1.5 lb fresh green beans (washed and trimmed)
- 1/2 cup chicken broth
- 1 teaspoon salt
- 1/2 tsp crushed black pepper
Step 1: Thinly slice the shallots and mince the garlic cloves so they're similar in size to the photo above.
Step 2: Heat olive oil and butter in a large sauté pan. Add the shallots and cook for 2 minutes, then add the garlic and cook for another minute or until lightly golden and fragrant.
Step 3: Add the string beans and the broth and mix well. Once the broth boils, reduce to a simmer, cover and cook for 10-12 minutes or until soft (but not over-cooked). You want to make sure they're still bright green with a bit of bite. If liquid still remains in the pot, increase the flame and cook uncovered for another minute until the liquid has evaporated.
