A Must-Try Mac and Cheese You’ll Make Over and Over
Remember that classic boxed mac and cheese you loved to make as a kid? Now there's a grown-up way to pull off that same recipe at home (without those messy powdered cheese packets). Make this must-try mac and cheese tonight for a nostalgic dinner your inner 4-year-old will secretly love:
What You'll Need:
- 1 lb. of macaroni shaped pasta
- 1.5 cups whole milk
- 2 tablespoons all-purpose flour
- 3/4 teaspoon salt
- 1/4 teaspoon ground mustard
- 3 cups shredded cheddar cheese
- 4 tablespoons unsalted butter (half a stick)
Step 1: Cook pasta according to package instructions making sure not to overcook the macaroni. Drain and set aside.
Step 2: In a saucepan, heat the milk over a low flame. Add the flour, 1 tablespoon at a time, whisking until the milk thickens and is lump-free.
Step 3: Whisk in the salt and ground mustard, then fold in the shredded cheese one cup at a time. Add the butter and mix with a rubber spatula. Once the cheese and butter melts and bubbles lightly, your cheese sauce is ready.
Step 4: Combine the cooked macaroni noodles with your cheese sauce and serve.
