No-Hassle Homemade Pumpkin Pie

An easy, no-hassle pumpkin dessert you'll make all season long.

Now that you've mastered the apple pie, it only makes sense to move on to pumpkin, no? Get a heads up on the holiday season by making this fuss-free homemade dessert tonight.

Makes: One 9-inch pie

What You'll Need:

For the Crust:

  • One 9-inch store bought crust (or follow the directions below to make the crust from scratch)
  • 2 cups all purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 12 tablespoons butter, cold, unsalted (cut into 1/2 inch cubes)
  • 1/2 cup buttermilk

For the Filling:

  • 3 large eggs (room temp)
  • One 15-ounce can of pure pumpkin puree
  • 1 cup half and half (or cream)
  • 1/3 cup + 2 tablespoons dark brown sugar
  • 3 tablespoons flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

Step 1: Prep the dough by adding the flour, sugar, salt, cubed butter, and buttermilk into the bowl of your food processor. Pulse 6 or 7 times until the dough forms. Keep in mind that it should be slightly sticky, but manageable. Wrap in plastic wrap and refrigerate while prepping the filling.

Step 2: Preheat oven to 425. In a large bowl whisk the room-temp eggs and add the pumpkin puree, half-and-half, dark brown sugar, flour, cinnamon, ginger, cloves, and salt. Whisk until lump free (this should take 2-3 minutes).

Step 3: Roll out the chilled dough on a lightly floured surface. Use a rolling pin to roll out the dough to a 12-inch circle (1/4 inch thick). Transfer the dough onto your pie dish and fold any excess dough underneath and crimp the edges. (If the dough feels too soft at this point, stick it in the freezer for 10 minutes).

Step 4: Pour the pumpkin mixture into the dough-lined pie dish and bake for 20 minutes. After 20 minutes, reduce the heat to 350 degrees and cook for an additional 40-50 min. (Just remember to stick a toothpick in the center of the filling to double check that it's cooked all the way through.) Allow the pie to sit and cool on a wire rack for at least 2 hours before slicing and serving. Now add a heavy dose of whipped cream and enjoy!
