If you're still without power in the wake of Hurricane Sandy, mealtime is becoming more challenging by the day. You're sick of the beef jerky and chips that was supposed to be just for a day or two– and even if you've been able to get to a grocery store, you've probably noticed that supplies are very limited. To help you make the most of the food left in your pantry, as well as the few items you've been able to pick up at your local grocery store or deli, we've come up with a list of meal ideas that don't require any electricity to make.
Chicken and Greens
Top leafy greens with pre-cooked chicken from your deli, goat cheese, and chopped veggies. Toss with olive oil and balsamic vinegar.
White Bean Dip with Veggies
Mash canned cannellini beans with olive oil, a spritz of lemon juice, dash of ground cumin, and a clove of garlic with a potato masher. Serve with sliced veggies and whole-wheat crackers.
Smoked Salmon on Crackers
Layer whole-wheat crackers with light cream cheese, smoked salmon, and capers. Serve with sliced tomato drizzled with olive oil and balsamic vinegar.
Arrange pickled veggies, a few cheeses, and thinly sliced meat (think prosciutto and salami) on a plate. Serve with crackers.
Easy Tuna Salad
Mix canned tuna with pickle relish, chopped veggies, olive oil, and salt and pepper. Serve on bread or crackers.
Simple BBQ Sandwich
Toss shredded pre-cooked chicken from the deli with bottled BBQ sauce. Top with veggies, if you wish. Serve with blue corn chips.
Middle Eastern Meze Platter
Arrange feta cheese, hummus, tahini, olives, and grape leaves on a plate. Serve with pita chips.
