Lobster Roll Recipe

A lobster roll consists of a buttered, toasted hot dog bun that is generously filled with either a cold lobster-salad mixture or hot chunks of lobster liberally drizzled with melted butter. It's ironic that lobster, one of the world's most luxurious foods, is also the featured ingredient in this, one of New England's least pretentious sandwiches.

Ingredients

Serves 4

Cold Lobster Rolls

  • 2 1/2 cups lobster meat, cut into chunks
  • 1/4 to 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/3 cup celery, finely chopped
  • 2 scallions, finely chopped
  • Salt and freshly ground black pepper, to taste
  • A few dashes of hot sauce, optional
  • 4 split-top hot dog buns
  • 4 tablespoons butter for buns
  • 1/2 cup shredded lettuce
  • 4 lemon wedges

Directions

Step 1: In a medium bowl, mix lobster, mayo, lemon juice, celery,scallions, salt, pepper, and hot sauce (if using). Stir untilwell blended. Place in an air-tight container and chill in the refrigerator for at least 30 minutes or up to 2 hours.

Step 2: When ready to serve, remove lobster salad from the refrigerator. Butter buns inside and out. Place on an indoor grill or in a large skillet over medium heat. Toast until golden brown and crisp all over. Divide lobster salad evenly among buns. Top each with shredded lettuce. Serve immediately with lemon wedges on the side.

Hot Lobster Rolls

  • 4 split-top hot dog buns
  • 4 tablespoons butter for buns
  • 3 cups warm lobster meat, cut into chunks
  • 1 cup hot melted butter

Step 1: Liberally butter the buns both the inside and outside. Place them on an indoor grill or in a large skillet over medium heat. Toast until golden brown and crisp all over. Divide lobster meat evenly among buns.

Step 2: Serve immediately with the melted butter on the side for drizzling over the sandwich. (If you put it on the roll too early, you risk a soggy bun. You need a sturdy bread base to cradle all that luscious lobster.)
