A frittata is one of those golden dishes that can get you going at the start of the day, give you comfort for lunch, be a brunch fave and can end your day as a satisfying dinner. And it has that flair that makes it rustic and elegant all at the same time. It's perfection on a plate. At this very moment, you're probably thinking, when can I have that? Now, now, now!

What You'll Need:

(Serves 4)

  • 1 tablespoon olive oil
  • 1/2 yellow onion, thinly sliced
  • 3 cups spinach, tightly packed
  • 5 large eggs
  • 1/2 cup grated cheese
  • Splash of milk
  • 1 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper


Step 1: Turn your oven on to the broiler setting. In a large oven-safe sauté pan, heat the olive oil over a medium-high flame. Add the onion and cook until translucent and soft — about 7 minutes — stirring occasionally.


Step 2: Add the spinach to the pan and cook until wilted (about 3 minutes).


Step 3: In a bowl, whisk together the eggs, cheese, milk, salt and pepper. Add the egg mixture to the pan and allow it to cook without touching it until the edges firm up (about 2 to 3 minutes).


Step 4: Transfer the pan to the oven and broil the frittata for 4 to 5 minutes or until it's cooked through. Serve that beauty of a simple dish warm.
