Perfectly Crispy Fried Chicken Recipe
Fill your Memorial Day picnic basket with a batch of homemade, golden brown Fried Chicken.
What You'll Need: (Serves 4)
- 8 pieces of chicken (4 drumsticks and 4 thighs, bone in and skin on)
- salt and pepper
- 1 cup buttermilk
- 1/4 cup Franks Red Hot (or any other hot sauce)
- 2 tablespoons poultry seasoning
- 3 cups peanut oil
- 1 cup all-purpose flour
- 1/4 cup corn starch
Step 1: Add your chicken to a large bowl and season generously with salt and freshly cracked black pepper. Pour the buttermilk and hot sauce of the chicken pieces, and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 3 hours or overnight.
Step 2: Heat the peanut oil in a large heavy frying pan. While the oil is heating up, drain the liquid from the chicken and season generously with the poultry spice, on both sides.
Step 3: Pour the flour and corn starch into a casserole dish. Mix well and dredge each piece of chicken in the flour mixture and shake off the excess. Allow the dredged chicken to rest for about 2-3 minutes before placing into the frying pan.
Step 4: Once the oil reaches 350 degrees. Transfer 4 pieces of chicken, at a time, into the hot oil, skin side down. Cook for 14 minutes on each side or until golden brown.
Step 5: Transfer the fried chicken pieces onto a rack and allow to cool before serving.
Tip: Recipe can be easily doubled for a bigger crowd.
