Simply Delicious Recipes for Creamed Potatoes Done 5 Ways
Dressed up or down, creamy potatoes are always a fan favorite. Nix the boxed version and try these five easy-to-make variations on the classic recipe:
What You'll Need:
2 1/4 pounds Yukon Gold potatoes
1/3 cup warm milk
1/4 teaspoon freshly grated nutmeg
3 1/2 tablespoons butter
sea salt and freshly ground black pepper
Place the potatoes, whole and unpeeled, in a saucepan with the largest ones at the bottom, and fill the pan halfway with water.
Cover the pan and place over high heat. When the water begins
to boil, drain off about half of it, leaving just enough for the potatoes to steam.
When the potatoes are cooked, about 30 to 40 minutes
depending on their size, drain and peel (hold them in a kitchen towel if they are too hot to handle), then place in a warm bowl.
Mash the potatoes, gradually adding the warm milk. Then add thenutmeg, and butter, and season to taste with salt and black pepper.
Mustard Creamed Potatoes Fold in 1 tablespoon dry mustard and 1 tablespoon yellow mustard seeds.
Colcannon Add 2 chopped scallions or 1 finely chopped leek to the cold milk in a saucepan and slowly warm the milk while cooking the scallions or leeks.
Sweet Onion Creamed Potatoes Stir in 6 tablespoons caramelized onions.
Cheddar Cheese Creamed Potatoes Stir in 6 tablespoons shredded sharp Cheddar.
St. Patrick's Creamed Potatoes And for all you fun-loving St. Patrick's Day followers, add in 4 tablespoons finely chopped flat-leaf parsley for the green effect!
