How to Bake Chicken With Rice-A-Roni

Rice-A-Roni is a seasoned rice and vermicelli mix marketed by Quaker Oats. Most people serve Rice-A-Roni as a side dish. But it can also be used with chicken and vegetables as a main course. Juices from the baking chicken enhance the flavor of Rice-A-Roni.

Step 1.

Cook the Rice-A-Roni on the stove, following the directions on the package.

Step 2.

Preheat the oven to 350 degrees Fahrenheit.

Step 3.

Lay four chicken breasts out in a glass baking dish big enough to hold all of them, plus your rice and vegetables.

Step 4.

Mix the prepared Rice-A-Roni in a bowl with 1 can of cream soup, either chicken or mushroom, 2 cups broccoli and 1 cup chopped carrots. Add 1 cup of bread crumbs and 1/4 cup of melted butter. Stir thoroughly.

Step 5.

Spoon the rice mix around the chicken breasts. Drizzle another can of cream soup -- either chicken or mushroom -- over the chicken, and season as desired.

Step 6.

Cover the dish with aluminum foil. Place the covered dish on the top or middle rack. Bake for 30 minutes, and remove.

Step 7.

Remove the foil, and sprinkle 1/2 cup of your favorite cheese over the rice. Top loosely with 1/4 cup of bread crumbs. Place the open dish back in the oven for 15 to 20 minutes. Remove when the cheese is bubbling, and the chicken is brown.

  • 1 box chicken-flavored Rice-A-Roni

  • 4 chicken breasts

  • 2 cans cream soup

  • 2 cups broccoli

  • 1 cup chopped carrots

  • 1 1/4 cup bread crumbs

  • 1/4 cup melted butter

  • 1/2 cup shredded cheese

Tip

Check the chicken for doneness by cutting into one breast. If the center is pink, the chicken needs to cook longer.

Warning

Wash your hands and cutting board after handling the raw chicken to avoid contaminating the other ingredients.
